German Pancakes

You guys! This is one of my favorite things ever. Sometimes you can find it called Puffed Oven Pancakes. Same thing. So good. It is so delicious, and so so easy. And everyone I've ever made it for has loved it. I guess they could have been lying, but I doubt it.

Ok, here's what you'll need:

  • 2 T of butter
  • 6 eggs
  • 1 c of flour
  • 1 c of milk
  • 1/2 t of salt
  • syrup or jam to top it off

First you want to start by preheating the oven to 400. Then put the butter in a pyrex dish and put it straight into the oven while the oven is still preheating.

While the butter is melting whisk together the 6 eggs. Then add the milk, flour, and salt.


Pour into the melted butter and bake for 20 to 25 minutes.




Yes, those are dart guns in the background. Christmas gifts from my dad. 

That's it! You can either top it with syrup and powdered sugar, or with jam, which is my favorite.


*The puffiness will go down in a little bit, so don't think you ruined it. They're still delicious.
**Also, this is a doubled recipe. Whenever I make this I have a bunch of guests so I couldn't get by with a smaller version. If you want to half it, use the same amount of butter still!

Weekend Recap and Some Yummy Fall Recipes

Settle in my dears! We have a long post ahead of us! My weekend was great. Full of fun.

Friday afternoon I met with some coworkers for some much needed drinks. Much. Needed. We went to a really neat restaurant called the Oval Office with an amazing martini menu. I had never been there before but I will be definitely going back with Justin soon to try out the food!

Then I met Justin, my sister Veronica and her boyfriend Darren for dinner at Bardenays. It's always great to get to spend time with them. After dinner we got froyo and went home to play some Mario Kart on the Wii. Pretty solid night.

Saturday was a fun full day.

We woke up and made our way up to green bluff for apple picking, pumpkin picking, and Punkin' Chuckin'. I also got some corn stalks which I had been searching for everywhere here in Coeur d'Alene.

Punkin' Chuckin' 

This might not look like much.... but this is the strawberry field where Justin proposed! 
It's always fun to get to go back to our spot! =)

When we got home Veronica and I made our mom's delicious Apple and Blackberry cobbler. I am doing you all a favor by sharing it with you because it is so easy and so yummy. It is sure to be a hit whenever you make it.


Apple Blackberry Cobbler
Filling:
  • 4 lbs of golden delicious apples; peeled, cored, and thinly sliced
  • 2 1/2 c frozen blackberries 
  • 1/4 c flour
  • 1 c sugar
  • dash of lemon juice
Mix all ingredients well and pour into a greased 9x13 dish.

Topping:
  • 2 c flour
  • 1 1/2 c sugar
  • 1/4 tsp salt
  • 1 c butter, sliced
  • cinnamon 
In a bowl mix ingredients with a pastry blender until crumbly.

Pour the topping over your apple mixture. Sprinkle with cinnamon. Bake at 350 degrees for 45 minutes to 1 hour; until fruit bubbles and top is golden brown. Enjoy!

Veronica and Darren left to go on a boat cruise on the lake. Justin and I watched Hocus Pocus and then a marathon of the last season of Breaking Bad. We were up late, but it was worth it.

This morning I made Pumpkin Pancakes!


Pumpkin Pancakes
This is the pancake recipe I always use without the pumpkin spice, and it is my very favorite.
  • 1 c flour
  • 1 T sugar
  • 2 t baking powder
  • 1/4 t salt
  • 1 beaten egg
  • 1 c milk (We usually only have almond milk in the house so I use that, and it turns out just as good!)
  • 2 T cooking oil
  • 1 t pumpkin pie spice 
This recipe makes about 6-8 pancakes.
Also, pumpkin pie spice is kind of expensive. If you want to make your own you can do so by combining 1 t cinnamon, 1/4 t ground ginger, 1/4 t ground nutmeg, and 1/8 t ground cloves.

We enjoyed pancakes and leftover cobbler while watching The Hobbit. Then we were a little bit productive. Which is always nice.

And then we carved our pumpkins and made caramel apples and pumpkin seeds!





Justin's is the one with the goatee... don't ask me why he does this. But his pumpkin gets one every year. It's tradition now. =)

The Perfect Spicy Sweet Salty Seeds

  • 1 beaten egg white
  • 1/4 c sugar
  • 1/2 t cayenne pepper
  • 1/2 t salt
  • 1 c fresh seeds

Combine first four ingredients and mix well, then add seeds. Pour into a strainer to drain excess egg whites. Pour onto a cookie sheet in 1 even layer and bake at 375 for 10-12 minutes.

Such a great weekend filled with yummy food, my favorite people, and great fall activities!

Weekend Recap

For having a weekend with nothing going on, we sure did a lot!!

Friday night we ordered in Thai food and watched Breaking Bad. It was so nice and relaxing and wonderful.

Saturday we got up early to help with my school's Regal Run. This is a little run around our neighborhood park where the kids stop at stations and recite an "I can" statement based on an important character trait.

Justin and Doodle helped out and our station's character trait was Service.


Before the race got started we had our sign up and were waiting and a little old lady stopped and asked if we could perform some services doing work at her house. We had to explain to her what we were doing... It was kind of funny. =)

When we got home I made this beautiful fall wreath!


I just love it! It turned out just how I wanted it to and it looks great on my front door! I'm going to do a DIY post about it tomorrow so stay posted for that!

Then, Justin's mom and I decided to try out a recipe and make homemade pesto gnocchi! It was really fun and pretty darn good too! Post on how to do that soon too. Wow, I'm promising so many posts here, I hope I can keep up!



Then Justin and I met up with some friends and headed out to a big country bar for the night. I love country but had never been to this establishment because Justin is not the biggest country fan. And when I say not the biggest fan I mean he absolutely does not love it! But we've got to get him ready for that country concert on Wednesday night! Jason Aldean here we come!






Sunday we took advantage of Dairy Queen's buy one get one for 99 cents blizzard deal, and it was delicious. And we watched more Breaking Bad, of course.

What I'm Loving: Fall-ish Edition


I am loving that I got to go to a good friend's wedding and celebrate her big day with some wonderful friends over the weekend.









I am loving that Pumpkin Spice Lattes are back. When before mentioned friends were in town one of them mentioned this to me and I scurried over to Starbucks just as quickly as I could to snatch me up one of those babies. And it did not disappoint! Yum!

I am loving the rain lately. I love the rain. It's actually one of my favorite types of weather. And waking up to the rain this morning made it seem like I wasn't missing out on summer when I had to go to school.

I am loving wine. Does this need any explanation...


I am loving my husband. Always. But especially when I am nervous about my first day of school and he sends me sweet texts throughout the day. And then when I arrive home after 11 hours at school to dinner being made and a glass of wine. So wonderful.

I am loving that it's a 4 day week. Again... probably no explanation needed but still, it makes it so much easier to go back to work.

I am loving the OPI Polish Peace, Love, OPI. The whole San Francisco collection is awesome but I couldn't resist grabbing this color. It's different and fun, and a good fall color. I'm rockin it on my toes right now and it's great.


I am loving Too Faced Better Than Sex Mascara. Seriosly. Loving. It. Review coming soon because it's amazing.


Justin and I are loving this brownie in a cup recipe. It's perfect for when we are craving a little late night treat. Justin even went as far as to say that it was the best brownie he had ever had. That might have just been because of how badly we were craving one... but still.


And loving this guy... always.
