WILW


I am loving that it is summer and I am still off work! Hollllla! Sidenote here.... because I'm on summer break I have not really gotten ready for anything and have not really taken any pictures of myself. Sorry about that.

I am loving that my husband and I just celebrated 1 month of marriage!!

I am loving that we got to go on a little double date last night with Veronica and her boyfriend Darren. We saw Wolverine. It was pretty good. You get to see a little of Hugh Jackman's bottom. I didn't hate it.

I am loving that Watershed is only 3 days away! Can't wait! I am ready for some girl time and some country music!

I am loving that Veronica, Darren and I are going to Silverwood tomorrow...just for fun. Sucks you have to work Justin. Sucks to suck. Sorry not sorry.

I am loving that I have been cooking every night this week! So wifey of me. I'll be sharing some great recipes on (Tasty) Tuesday. So stay posted.

I am loving TV lately. Like more than normal. I have a show to watch almost everyday of the week. It's  out of control. Here's just a few of my loves...

I am loving that even though I got my eyelashes filled over a month ago, and am not planning on getting them refilled, they still look pretty good.

I am loving my little blog facelift. I didn't really do much but I made myself a favicon and changed the layout just slightly. But I love it.

I am loving the book Miss Peregrine's Home for Peculiar Children. It's taking me an annoyingly long time to get through it. Not because it's not good, but because there are so many fun activities going on around here these days. But it's good. Promise.


I am loving Pinterest. I recently reorganized my boards. (Am I the only freak out there that does this?) And now there are millions of crafts and recipes and projects for me to do.

Tasty Tuesday: Fish Tacos

As promised in my last post I am here to share with you the amazing fish tacos recipe. Seriously it's so good. If you like fish tacos at all please try it and then get back to me about how right I was and how you can't believe you've been living life so far without this recipe.

Also I am going to try to start posting a Tasty recipe that I have tried and love each week on Tuesday! So look forward to that! Ok, here we go.

What you'll need for the fish:

  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika 
  • 1/2 tsp salt
  • 4 white fish filets (So far I've tried it with Swai and Mahi Mahi and both were amazing. I'm sure tilapia would work well too.)

So combine all of this together in a little bowl and then pour it on to the fish filets in a big dish or pyrex. Move them all around in the juice until they all look evenly coated. Then cover it and put it in the fridge while we make the yummy sauce.

What you'll need for the yummy sauce:

  • 1 large avocado
  • 1/4 c plain greek yogurt
  • 1 tbsp lime juice
  • 1 c roughly cut cilantro (I washed mine and then cut it straight into a measuring cup with my big kitchen scissors.) 
  • 1 jalapeño (You could do more or less of this depending on how spicy you like things.)
  • 1/2 tsp salt
  • 1/4 c water

Put all of this in a food processor or blender and process it until it is smooth and creamy and the jalapeño and cilantro are just little specs. Transfer the sauce to a bowl and put in the fridge to chill while you cook the fish!

I used my best non stick pan and cooked the fish on medium heat. I flipped them over once after about 4-5 minutes. Once the fish it flakey and cooked through I cut the fish into fourths so it would be easier to serve.

Other things you'll need:

  • warmed tortillas (I used the little flour ones and that was my favorite but Justin liked corn better. 
  • broccoli/cabbage slaw
  • lime wedges
  • diced tomato
  • shredded cheese

And any other type of taco garnish you would like.

Assemble your tacos and you're done!

This has become a favorite in this home and it is so easy to do!

Weekend Recap

We had a pretty great weekend.

Friday Justin and I went to dinner with some family.

This is the only picture I took of dinner with the family... At least it's a good one.
This is my nephew. Isn't he so cute? I mean look at those cheeks!  
 I also received some items I had ordered from Scentsy and also from Pampered Chef. Isn't it so fun to get things you've ordered?! From Scentsy I ordered a bunch of wonderful summery scent bars. From Pampered Chef I ordered this awesome chip maker.
And these sweet adjustable measuring spoons. They're pretty cool. 
On Saturday we were super productive. Cleaned the house. Went grocery shopping. Justin mowed the lawn. And then we went cliff jumping! I jumped off a particularly high cliff that I hadn't jumped off since high school... so that was exciting. =) 

When we came home we did some experimenting with the chip maker. We did regular potato, sweet potato, carrot, zucchini, and kale. Kale and the potatoes were the favorites. We are also going to try apples and radishes, and more of our favorites. 

We also made candied nuts! It was actually a really easy recipe and they were so yummy!! You can see the recipe here. The only thing I did differently was I used some walnuts and some almonds. Yum! 

Sunday we mostly just relaxed. My sister and I did our nails though. I was pretty adventurous.

I also made awesome fish tacos. These tacos are so so so good. Justin went as far as to say that this is his new all time favorite meal I make. This replaces beef stroganoff which was the reining champion for at least a year. I'll be posting the recipe soon!

5 Things

Ok you all! My life has been so crazy busy. So I'm here to catch you up on some great things that have been going on.

1. I got to move my grandma's piano into my home. The 700 lb beauty was at my dad's house which he is currently trying to vacate. My brother and I got it loaded up (with the help of 4 men) and drove it 8 hours each way and delivered it to my house. Along with a whole lot of other stuff. I'm so excited to have such an important piece of family history in my home!

2. When I got back from Ashton Justin, Veronica and I headed up to Wallace to go on a zip lining trip with one of Veronica's friends and a fellow Kappa sister; Scout, who is a tour guide there. It was so fun and such a thrill. We also got to go on a tour of a mine while we were there. I thought the best part was these fat little chipmunk like creatures that were hanging out all over the place! We want to go again as soon as possible!

I don't really get this which makes Justin laugh... But I guess it's still picture worthy! :) 

3. Two other Kappa sisters of mine have started up their own blogs! I am so excited to keep up with them! You can check out Laura here, and Natalie here!

4. I finished Dan Brown's Inferno a while ago and have not had the chance to blog about it. It is great. If you have read his other books you probably don't need much convincing. I love reading his books, I feel like you get little history lessons while reading. I like to keep my computer close by while reading so that I can look up all the pieces of art that they are referencing while reading.

I have also finished Divergent and Insurgent both by Veronica Roth. They were both quick reads and super good! Review's coming soon!


5.  My good friend Meredith and I, whose blog you can read here, have decided to start a little online blogger book club. It's still new so we're working out the kinks but we decided to read Miss Peregrine's Home for Peculiar Children as our first book... so look forward to new posts about book club! =)

What I'm Loving!

It's been a little while since I did a What I'm Loving Wednesday post but I'm getting back into it! And linking up with This Kind of Love.


I am loving my new haircut. I usually hate getting my haircut, but so far I love it. We'll see how I feel tomorrow when I have to style it myself.


I am loving that Watershed is 16 days away! I can't wait.

Champagne Peach Sorbet

You guys! If you own an ice cream maker or have access to one. You need need need to try this Champagne Peach Sorbet recipe. I originally saw this recipe for Sparkling Peach and Thyme Sorbet over at Eat Yourself Skinny. It sounded yummy but I tweaked it a little bit for me.

Here's what you'll need:

  • 8 medium sized peaches
  • 2 c of water
  • 2/3 c sugar
  • 2 T agave
  • 2 tsp lemon juice
  • 1 c champagne
  • ice cream maker
  • a bunch of ice (more than my refrigerator could make at once) 
  • ice cream salt


Before you get started, know this: This is quite a lengthy process. I thought I would start it after dinner and have a late night snack. Not so much. It wasn't ready until the next morning. But don't worry. It's worth the wait!

Here's how it's done:

1. First of all you need to peel your peaches. This is also quite the process. I didn't know this until after I bought my peaches but apparently there are two different kinds of peaches and one can easily be peeled and the other is harder. Mine were half and half. Don't ask me how I did this because I do not know. 


Anyway. Boil some water and drop your peaches in there. Let them boil for about 4 minutes. Take them out with a slotted spoon and let them cool. Once you can touch them you should be able to peel them by pinching the skin with a butter knife and your thumb and just pulling it off. It's pretty easy. Unless you got the bad peaches. You can peel these little devils with a potato peeler but you end up taking off some of the meat and its a lot messier. 

2. Now that you have them peeled. Slice the peaches up! Put the peaches in a sauce pan with water and sugar and mix well. 

3. Bring the mixture to a boil, and then allow it to simmer for 15 minutes.


4. Mix in the agave and lemon juice. Then let the mixture cool for about 15 to 20 minutes.

5. Put the mixture in a food processor or blender and puree until smooth. 

6. Cover and chill in the refrigerator for 3 to 4 hours. 

7. Once the mixture is cooled stir in the champagne. And pour yourself a glass for all your hard work! =)

I had a helper... these aren't both for me. 

8. The mixture is ready to put into your ice cream maker. Follow your ice cream maker's instructions. Mine needed a bunch of ice and salt. It mixed for 40 minutes. Then I had to cover my ice cream and put it in the freezer for 4 hours. 


9. Enjoy!! My only complaint was that it was a tiny bit flakey. But once it sat out for a minute and just barely started to melt it was perfect!! Yum!
