Tasty Tuesday: Agave and Cinnamon Bananas

Hey guys! It's Tuesday and time for me to share another yummy recipe with you. Today we are making delicious little Agave and Cinnamon Bananas. You might have seen a variation of this recipe on Pinterest. Most of them call for honey though and I like agave better so that's what I used.

What you'll need:

  • Cinnamon
  • Coconut oil
  • Agave
  • Bananas

 1. Get out a frying pan and put a few spoonfuls of coconut oil in the bottom over medium heat. If you have the spray just nicely coat the bottom.

2. Slice up the bananas about a quarter of an inch thick. This is just an estimation though. It's not like I had my ruler out measuring those babies.

This is 2 bananas worth.

3. While those are frying up combine 2 tablespoons of agave with 1 tablespoon of water.

4. After about 3-5 minutes the bananas will start to get toasty looking. That's when you want to flip them all over.

5. Once you get them all flipped over pour the agave water combo over the top. This is when the magic happens.

6. Sprinkle with cinnamon. (Side note: Do you know how good cinnamon is for you? It has anti-clotting actions, anti-microbial actions, helps with blood sugar control, boosts brain function, improves colon health, and protects against heart disease. Seriously. So sprinkle on that cinnamon. Sprinkle it on real good.) source

6. Now you wait until all of the agave and water bubbles away. Check the bananas often to make sure you aren't burning any. If they start to get too brown you can take them out while the rest finish up.

7. Then you're finished! Transfer to a plate and let them cool. You can eat them plain, on ice cream or on yogurt! Yum, yum, yum!!

Please ignore that one on the left side that looks a little burnt. He got away from me...

Try these little tasties out and let me know how you guys like them!!

P.S. How funny is this picture of Doodle...

... he seriously just sat there with his front legs on the ground for about 20 minutes.

Also, I tried to lighten this picture up so you could see his eyes but it didn't really help. He's just too dark. Oh well. But trust me...he's cute.

Salad and Dressing Recipe

You guys, I'm about to change your lives. This salad and salad dressing recipe is seriously soo good, and so easy! I get requests to make it all the time, and people always want the salad dressing recipe!

I've been wanting to start a post series based on things found on Pinterest and trying them out. Let's be real here. We're all addicted but how often do we go and try out those things we've pinned, and when we do try them out, do they work?

I originally found this salad here. But I put my own dressing on it. Still I say it's a win for Pinterest.

What you'll need:
*lettuce I love this spring mix with herbs, but any kind will do.
*1 cucumber Does any one else rub the ends of the cucumber against the main part when you cut it off? I have no idea why I do this... I must have seen my mom do it or something but I have no idea what the purpose is. Anyway! Peel the cucumber slice it into wedges and then cut it up.

*1 tomato Diced

*1/4 red onion Dice the red onion really small. My MIL showed me this method to dice an onion the other day. Changed my life.

First slice the onion across one way, but don't go all the way through.
Then across the other way, so you're making little squares. But still don't cut through.
Then turn the onion on its side and slide all the way down and there you go! Diced onion!

*basil Now I really like basil so I put  a lot in, but you can use as much or as little as you like. Take off the big stems and slice it up.

Sometimes I'll add avacado or chicken or maybe some pesto shrimp, but this is the basic recipe.
Yum!

For the salad dressing:
If you make just this amount it's enough for the salad but I like to quadruple it so that I have it in my fridge for any salad that I want. It's that good!
*1oz olive oil
*1/2 oz balsamic vinegar
*1/2 tsp stone ground dijon mustard
*1 TB agave nectar
*T TB lemon juice
*a few shakes of salt

Put it all in a container, shake it up, and enjoy!

**Side note: The olive oil gets hard when this is in the fridge so you need to let it sit out for a little bit before you use it.

Let me know how you like it!

Stuffed Flank Steak

This morning, in the Christmas Break way, I was sitting around pinteresting when I found this delicious looking recipe for stuffed flank steak. Justin and I are both pretty big fans of flank steak so we decided to try it out. By we I mean Justin said, "You should totally make that for dinner tonight." So I did. Now I make a lot of things off of pinterest, sometimes they turn out well, sometimes not so well, pinterest can be deceiving. But this looked pretty easy.

So, I gathered the ingredients, put on my cute apron, and got started.

You're supposed to slice the steak open "like a book," but mine kinda looked creepily like lungs.
Creepy steak lungs.

Then you mix up all the other ingredients, and smear it over the steak. But I forgot to take a picture of that part. Then you roll it up, and you were supposed to tie it up but I didn't have any cotton string that I deemed appropriate for cooking so I made an executive decision and decided I didn't need it.

Looking good so far, right?

So then it cooks for awhile, and I went to go check out what Justin was doing. Him and Wyatt were supposed to be putting a shelf in our room for the cable box to sit on.

What good workers!

Anyway, back to the cooking. It came out looking pretty good. But in a lot of sauce slash oily liquidy stuff. The recipe didn't say anything about that so it threw me off a little.

When we cut it up it was supposed to look like this:

Mine looked like this:
That foggy stuff is steam, not a ghost.

So not exactly like the picture, but it tasted much better than it looked. I would recommend it actually. It was pretty easy. Tomorrow I think I'm going to try this zucchini lasagna recipe. Yum!
